What's your favorite wine to carry you through a meal?

High acid wines like Muscadet, Champagne and Barbera. The acid cleanses your palate and gets you ready for more food.

Tell us about a great wine that pairs well with a wide range of textures, temperatures and flavors.

An “orange wine ” has many different applications. That’s white wine made with skin contact, usually deep in color and with the texture of a red wine. Because of this they’re a great in-between, perfect with meat, fish or even cheese.

What's an underrated cuisine when it comes to wine pairing?

Chinese food. China has a bunch of different regional cuisines and my sommelier friends and I love to get Sichuan food, which is a bit spicier, and drink a cooling Riesling with it.

Do you have a favorite restaurant for drinking wine?

I love going to Bar Boulud to drink wine. They have such an amazing by-the-glass program. I have more than once traveled out of my way just to drink a wine on their list.

When you’re not working you...

I love being active. I’m running my third New York marathon this year.

You have a month to travel on a shoestring; where do you go?

I love to travel and studied in Spain as an undergrad. I had such a great time on a shoestring budget that I’d love to go back and explore further.

The Gilt Taste Kitchen

The Gilt Taste Kitchen would be called The Kitchen at Gilt Taste, but that would sound too much like the name of a store in a fancy shopping mall.
