These fish are plucked from the wild and arrive as skin-on fillets, ideal for a quick sear in a hot pan. Crispy-skinned and flaky, the white fish needs only a squeeze of lemon juice, a smattering of crunchy sea salt, and a hungry diner.

Founded in 1985 by a father and son team, New Zealand Seafoods started with a mission to introduce American diners to the green-lipped mussel. Now the family-run operation is based in Los Angeles. Headed by wife Toni and son Timothy, they still source the freshest wild fish and shellfish that New Zealand's waters have to offer.

In July 2009, twenty-one marine and ecosystem scientists released the results of an International sustainability study. New Zealand fisheries received the highest possible ranking for ecology.
