Great lamb is full of flavor, surprisingly easy to cook, and never gamy. These grass-fed, antibiotic-free racks showcase the famous tenderness and mild taste of New Zealand lamb. Season them with salt and pepper, brown them in a hot skillet with a bit of vegetable oil, and coat with minced garlic, parsley, fresh thyme, rosemary and olive oil. Roast for 15 minutes or until they are 120 degrees. Remove from oven, tent with foil, and let temperature rise to 125 or 130 for medium rare. It's an extraordinary entrée that is extraordinarily easy. Here's what you get:
