This beautiful spread, imported directly by Tesori to Gilt Taste's customers, is the only of its kind to ever reach the United States. These squash blossoms elevate nearly any dish. We love them mixed into a creamy bowl of risotto or as a finishing touch to a pillowy frittata. To craft this beautiful spread, Sicilian artisans start with hand-harvested squash blossoms picked early in the morning near the Northeast coast of Sicily. Later that same afternoon, they mix an ancient Sicilian recipe known as "pate di fiore di zucca": a delicate orange-hued combination of squash blossoms, onions, garlic and oil.

Blossoming Business

La Dispensa dei Golosi, meaning “The Glutton’s Purveyor,” is a small family business located in Messina, Sicily. Boasting 50 plus years of Italian farming knowledge that's reflected in each hand-harvested squash blossom, artisans Titti and Donatello transform these yellow-hued wonders into a silky spread. Because of the blossoms' delicate structure that vanishes when it sits out for too long they make the pâté same day as the harvest. Titti and Donatello feel that sometimes nature has higher demand than the limited quantity they produce each year. According to Titti, "last year, we couldn't fill all of our orders because the goats went into our fields and ate our blossoms." A word to the wise, don't let the goat get you.
