In the 1980s, Lola Weyman discovered several farmers growing unknown varieties of lentils in Sun Valley, Idaho. She began distributing the beans and helped develop new heirloom lentil varieties. Zürsun was the first American company to offer authentic heirloom bean. Today it is owned by Jim Soran, a second-generation bean distributor.
