Ever since mixing cookie dough at age three, pastry chef Melissa Schack has been known as a "balaboosta," the Yiddish word for a woman who can do it all. So when she took the plunge with her own business, naturally she named it Balaboosta’s Bakery.

Tasty Technique

Bakers are known to be sticklers for gram-by-gram precision, but pastry chef Melissa Schack is a little more freewheeling in her methods. “When I bake, I am not measuring out how much chocolate I use,” Schack explains. “I know just by looking at the dough that if it’s swarming with fillings, it’s ready. Trust me, I am loading these brownies not with three chocolate chunks, but 40.” The result? These intensely rich brownies are a celebration of homegrown improvisation and professional technique.
