Ever since mixing cookie dough at age three, pastry chef Melissa Schack has been known as a "balaboosta," the Yiddish word for a woman who can do it all. So when she took the plunge with her own business, naturally she named it Balaboosta’s Bakery.

Trust me, I am loading these brownies not with three chocolate chunks, but 40.” The result? These intensely rich brownies are a celebration of homegrown improvisation and professional technique.
