It’s said that the petit fours was a 17th-century creation of Louis XIV’s pastry chefs. Instead of serving traditional grand cakes to the court, they opted instead for a bite-sized, delicate version. Valerie’s mint petit four is a mini layer cake with four layers of chocolate cake and three layers of mint-chocolate filling.
