Sustainable Roe

When Caspian Sea Sevruga sturgeon became endangered, and a ban was placed on its roe, Americans began to look at home for a sustainable way to get their caviar fix. American paddlefish, a cousin to the sturgeon, came to the rescue, its roe comparable in size, color, and taste to Sevruga (yet less expensive). Coupled with the crisp, potato-y texture of a perfectly cooked mini latke, it makes an appetizer that’s earthy and elevated at once.
