In developing her recipe for the perfect applesauce to pair with her handmade latkes, Linda Hausberg experimented with many varieties and combinations of spices until she came up with the blend that best preserved the flavor of the orchard, while subtly complimenting the earthiness of her latkes’ Russett potatoes.
