Goat cheese fanatics who want to branch out just a little bit—but not too much—go bananas for Humboldt Fog, a Californian cheese named for the Pacific mists. That pretty vein is vegetable ash, not blue, and the paste is luxe and creamy, with a slight mineral tang reflecting its time spent maturing in Murray’s New York caves. We love it with a crisp glass of Chenin Blanc.

Here's what you get:

Why We Love It

Spanish civil war veteran Murray Greenberg opened a wholesale butter and egg shop in the West Village in 1940. In the 70s he sold it to Italian immigrant Louis Tudda. In 1987, Rob Kaufelt bought the place, keeping the original name and adding small-batch cheeses that no one would buy. Now Rob counts Tony Bourdain and Alice Waters among his customers. His success is partly thanks to Murray’s famous cheese caves, where an affineur brushes wheels with wines and beers, turns them, and wraps them in various leaves. The result? Some of the best cheese in the country.
