San Andreas

Named for the famous active fault line in Sonoma County, California, Bellwether Farm's San Andreas is a sheep’s milk cheese more subtle than its namesake. It features a smooth, creamy paste, a golden rind, and a nutty, almost sour taste reminiscent of a great goat cheese.

Here's what you get:

Why We Love It

Spanish civil war veteran Murray Greenberg opened a wholesale butter and egg shop in the West Village in 1940. In the 70s he sold it to Italian immigrant Louis Tudda. In 1987, Rob Kaufelt bought the place, keeping the original name and adding small-batch cheeses that no one would buy. Now Rob counts Tony Bourdain and Alice Waters among his customers. His success is partly thanks to Murray’s famous cheese caves, where an affineur brushes wheels with wines and beers, turns them, and wraps them in various leaves. The result? Some of the best cheese in the country.
