Light years beyond supermarket cheddar, Cabot Clothbound is wrapped in muslin and aged for a minimum of ten months in the underground cheese cellars of Vermont’s Jasper Hill Farm. We think it’s one of the best cheddars around—buttery, caramelly, sweet and nutty. Its texture is dense enough to be reminiscent of aged Gouda (a good thing, in our opinion!)

Started in 2003, Jasper Hill not only creates artisan cheeses on their farm – they also ripen cheese from all over the state of Vermont in their cheese caves, spanning 22,000 feet beneath the pastures where their cows graze.

All of Murray's cheeses are cut to order and wrapped in cheese paper. This cheese will be shipped overnight and packaged in a box with an insulated liner designed to retain cold and prevent damage. All perishable orders are packed with non-toxic, reusable frozen gel packs. Murray's ships Tuesday through Thursday. You will receive an email from Gilt Taste notifying you of the ship date.

 

Why We Love It

Spanish civil war veteran Murray Greenberg opened a wholesale butter and egg shop in the West Village in 1940. In the 70s he sold it to Italian immigrant Louis Tudda. In 1987, Rob Kaufelt bought the place, keeping the original name and adding small-batch cheeses that no one would buy. Now Rob counts Tony Bourdain and Alice Waters among his customers. His success is partly thanks to Murray’s famous cheese caves, where an affineur brushes wheels with wines and beers, turns them, and wraps them in various leaves. The result? Some of the best cheese in the country.

Use and Care

  • Refrigerate upon arrival (we recommend the vegetable crisper, which is slightly warmer and moister than the rest of the fridge)
  • To serve, remove cheese from the refrigerator an hour before eating to bring to room temperature
  • Cheese needs to breathe, so do not wrap it in plastic wrap
  • Wrap any unfinished cheese in cheese paper or wax paper and store in the refrigerator
