The Cassoulet Way

Grandmothers in the districts of Toulouse, Carcassonne, Castelnaudary in Southwest France guard their cassoulet recipes like family heirlooms. Each region has its own variations, but the stew is always made with white beans and always cooked in a casseole, the earthenware pot from which this stew takes its name. Fabrique Delices’s cassoulet, the heavy hitter in their glass-jar assortment, runs concurrent to the Toulouse recipe, larded with duck confit and the garlicky pork and duck sausages traditional to the region.
