Supremely tender and mildly sweet, these sturdy ten-pound loins come from milk-fed porcelets. The milk only, no solids, diet produces meat that is as tender as it is succulent. “Porcelet refers to a ten-week-old Yorkshire breed pig,” according to D’Artagnan’s Joe Torkomian. We rub these loins in maple and mustard and roast them whole. Carved table-side, it’s an entree no one forgets.
