Lean and Lovely

Like boar, ostrich and many other game meats, buffalo is naturally lean. That’s a boon for reducing cholesterol, but game requires some extra care when cooking. Because of its low fat content, buffalo overcooks quickly. Rare to medium-rare is an ideal cooking temperature for these rib-eyes. A high-heat skillet sear on each side, plus four minutes in 425-degree oven should get you there. And as with any meat, be sure to rest the steaks before cutting in.
