Why We Love It

According to Ludovic Augendre, one of Mad Mac's founders, making a macaron is all about sourcing the highest quality ingredients and a little bit of patience. "First, we make the shell: it's an Italian meringue comprised of whipped egg whites, a sugar syrup and a mixture of almond flour and powdered sugar. We carefully pipe them into cookie sheets, bake them and then fill the shell by hand-piping the filling between the shell." The results yield the most perfectly airy cookie that's both chewy and crunchy, bursting with the glossiest filling that's way too hard to resist.

  • These macarons will remain fresh up to four days in the refrigerator and up to five months in the freezer
  • If frozen, allow macarons to sit at room temperature for thirty minutes before serving
