Seeds of the South
African slaves are credited to introducing sesame to the Americas in the 17th century. They called the plant, grown for its seeds, by its Bantu name, benne, and cultivated it widely in Georgia and the Carolinas, where local cooks and confectioners embraced its nutty, sweet flavor. Though not as identifiable as, say, grits or pecans as an entrenched ingredient in Southern pantries, benne is still widely used in the Lowcountry. At Husk in Charleston, for example, James Beard Award-winning chef Sean Brock coats smoked, peach barbecue sauce-glazed chicken wings in benne seeds from nearby Sea Island.
