Why We Love It

Traditionally, the Filet Mignon is cut from the very tail end of the tenderloin. However, since there's been such a high demand for this particular cut, some butchers have tried to up their return by passing off the entire tenderloin, cut into one-inch thick pieces, as the famed filet mignon. Flannery instead honors tradition. By only using the tail tip of the tenderloin he maintains the heritage of this prized cut.
