The prized ingredient for Hawaiian poke, this Pacific blue marlin, or "Kajiki" has a firm flesh similar to swordfish. It's sweet and delicate flavor reminds us of Hawaiian halibut. The brilliantly pale pink meat cooks to tender snow white the minute you poach, sear, or grill it.

Once your order is processed, your fish will arrive raw, fresh, chilled and portioned with skin and bones removed. It will be shipped overnight and is specially packaged in an insulated box with ice. Honolulu Fish Company ships Monday through Friday. You will receive an email from Gilt Taste notifying you of the ship date.

One of the company's largest efforts to maintain happy schools (of fish) is their "no net fishing policy." Net fishing is considered the most destructive fishing approach and can wipe out entire ecosystems at a time. Honolulu's prized Kajiki fish is beautiful when chopped into bite-sized pieces and served with a peppery sambal vinaigrette.
