You’ll find a needle in a haystack faster than you can track down a bottle of 2007 MX Cabernet (just two highly-coveted barrels of this stellar vintage were produced). Only a handful of winemakers get the opportunity to work with fruit from Beckstoffer To-Kalon’s small vineyard site, and the privileged geniuses at MX have developed the grapes into a bold, smoky, berry-rich wine. The bottle deserves some decanting, so give the vino time to breathe while you prep a proper Sunday roast.

Napa Valley-based MX wines hand-crafts miniscule quantities of Cabernet Sauvignon and Zinfandel. The vineyard site from which they craft their Cabernet Sauvignon, Beckstoffer To-Kalon, is famous for producing ultra-extracted, age-worthy wines, and similar bottlings often trade for two to three times the price (think Harlan and Schrader).

Shower liberally with smoked salt and crushed green peppercorns, and roast as you would a rack of lamb. Serve rare to medium rare, as this very lean meat tastes best when on the pink side.
