We know what you’re thinking: Gingko nuts smell foul. And it’s true. If you’ve ever walked past a female tree in fruit, well… let’s just say it’s not pretty. But once the nuts outer fibrous layer is removed (as Food Connect does for you) and the nut extracted from the shell, you have a sweet, complexly flavored ingredient. Chef Anita Lo, of New York’s Anissa, adds them to a rice-based stuffing for quail. They add a lovely texture to a Japanese salad of spinach, corn, peas, mushrooms, and shrimp. Or just pop them in your mouth as you would edamame.
