Why We Love It

Bitter is not a word in this nightshade’s vocabulary. Unlike some larger American and Italian varieties, the Chinese eggplant, which has fewer seeds, has an almost-sweet flavor. Food Connect’s Brian Hashizume has selected the most tender and mild of the breed, and we love them stir-fried with pork, roasted and mashed to make a baba ghanouj, and preserved in oil to add to our sandwiches when we’re in a Ping Tung mood.
