Green Shiso Leaves

With just a hint of mint and basil (which are distant botanical cousins), and a touch of cinnamon, ohba, also commonly known as green perilla or shiso, is an essential Japanese herb and seasoning. The green variety has more robust flavor than the red. Its beautifully spiked leaves can give miso a fresh outlook, and when piece of beef, chicken, or fish is grilled and wrapped in ohba leaves, it takes on a whole new profile.

Green Glory

Like umami, it’s hard to describe the flavor of shiso. But soups, from a hearty vegetable to a delicate miso would be grateful to have a few of these lively leaves join the mix. They punch up fish, raw or cooked, and salads of mild greens and cucumbers. Shiso goes by many names—green perilla, zi su (in Chinese), and ohba. It’s also called the beefsteak plant for good reason; it’s the bright taste that a steak craves.
