With flavors of mint and basil (which are distant botanical cousins), bi-color ohba, also commonly known as shiso and perilla, is an essential Japanese herb and seasoning. With its leaves of green, with purplish-red undersides, the bicolor combines the best of both varieties, the mildness of the red with the robustness of the green. Cooks prize it for making uméboshi (pickled plums), and as a garnish for fish, as well as for giving a green salad a deliciously spicy lift.
