Basil Therapy

One of our favorite ways to use Thai basil is in a summer roll, with baby cilantro and carrots. But it seems the Southeast Asian native herb appears in our kitchens as frequently as its Italian cousin does—in a chicken soup with kaffir lime, snowpeas, and lemongrass, or mixed with mint and cilantro as a salad to accompany sea scallops. Maybe it’s also because, in aromatherapy terms, the scent of basil has a calming effect.
