Juicy Greens

In Japanese, mizuna means water or juicy vegetable, because of the plant’s moist stalks. Asian vegetable expert and author Joy Larkcom likes to pickle mizuna, and uses stalks and leaves in a stir-fry with almonds and saffron which she then cooks together with a mild fish such as cod or sea bass.
