Mint Condition

With more than a dozen species of mint to choose from—from bergamot to English and field mints—there’s still something special about common mint (Mentha arvensis), with its emerald green serrated-edge leaves and its soothing fragrance. It makes our marinated eggplant and our simply steamed carrots lively, and a glass of iced tea or a bowl of chocolate ice cream coolly bracing. The only condition we have when it comes to mint is that we’re never without it.
