The flavor of red orache is similar to green spinach or chard, but its shade of magenta is anything but ordinary. It’s been grown for millennia and cooked long before the advent of the green spinach we know today. We think it’s at its peak when young, as Brian Hashizume gathers it, and served as part of a salad. We think it’s best served tossed into a simple pasta, dressed with olive oil, salt, pepper and lemon juice, right before you send it to the table.
