The burgundy variety is especially striking. If amaranth didn’t taste so rich, we might just admire it in the garden, so lovely are its leaves of green and burgundy. Some varieties are grown simply for feasting our eyes. But with this amaranth, you’re going to want to eat every bit, including the soft, juicy stems. Sauté both leaves and stems with extra-virgin olive oil, garlic and chives. Toss a handful into a mild soup, or braise the amaranth with chickpeas and some hot chile flakes.
