Michigan ranks fifth in the US maple production, as it’s uniquely suited to extract sap— with an extended period of warm sunny days and freezing nights that create pressure to force the sap up and out of the maple tree. This particular version—Grade B—comes from the late season harvest, where the higher sugar and mineral concentration yields a more rich, caramelized, and concentrated flavor.

What's in a (Syrup) Grade?

An A may be the best grade you can get in school, but when it comes to maple syrup it’s a different story. The US system of maple grading is based on translucency; the lighter the syrup, the higher the grade. There are four grades total, broken in two major categories: Grade A and Grade B. Grade A (comprised of three sub-categories: Fancy, Grade A Medium Amber, and Grade A Dark Amber) is lighter in color and milder in flavor. Grade B, made from late-season sap, has a darker color and more robust flavor, often favored for cooking and baking applications.
