Caviar

The term caviar—Persian for “bearing eggs”—denotes lightly salted Sturgeon roe, of which there are four main types—Beluga, Sterlet, Ossetra, and Sevruga. Although Russia used to reign, in recent years other geographic areas have been deemed synonymous with expert production. Black River hails from Uruguay—marrying a perfect combination of Siberian sturgeon with sustainable aquaculture. The malossol method reflects “little salt,” a method employed in recent years due to advancements in refrigeration (i.e. there need not be as much salt used for preservative purposes).

Use and Care

  • Caviar is best served cool, but not frozen (roe may burst if frozen)
  • Remove from the refrigerator approximately 15 minutes before serving; remove the lid right before service
  • Serve caviar in its tin can set over ice
  • Once opened, caviar will keep approximately 1 week in the refrigerator, wrapped tightly with plastic and gently turned each day to maintain equal distribution of the oil; Note that flavor will degrade over time, so we highly recommend eating it in one sitting
  • If you are serving the caviar on its own, account for 1–2 oz per person; if serving as a garnish, account for up to 1 oz per person
