Ronit and Shuli Madmone are the rare married couple that work together and love doing so. They are committed to finding the best spices around the world, and are renowned for grinding every spice to order. They will mix up a batch of Herbes de Provence just before shipping, or smoke and grind chiles to make a chipotle-and-honey rub ideal for pork chops. Ronit and Shuli suggest flavoring cooking oil with whole spices and removing them before adding vegetables and meats, then adding powdered spices just before a dish starts to simmer, then season to taste as it cooks. This contributes wonderful layers of flavor to any dish that benefits from some spice.
