This two-pack lets you indulge in the classic charms of top-of-the-line caviar while still being a bit adventurous. Celebrity chef Jacques Pépin prefers the firmly textured richness of pressed caviar. Known as payusnaya in Russian culinary tradition, it combines nutty California White Sturgeon, briny Paddlefish, and creamy Hackleback in a concentrated, cohesive disc ideally suited to molding, slicing, shaving with a vegetable peeler or lightly cooking. His wife Gloria prefers the gunmetal gray beads of Paddlefish caviar, with a saline snap fit for smoked seafood, shellfish and a well-chilled glass of Muscadet.

Once your order is processed, your products will be shipped to your for overnight delivery. Caviar is packaged in an insulated box with frozen gel ice packs to keep your products fresh. You will receive an email from Gilt Taste notifying you of your ship date. California Caviar Company ships on Tuesdays and Thursdays.

 

Caviar for Two

The beauty (and fun) of pressed caviar is that it invites you to break the rules. Instead of treating it as a fragile delicacy, throw it in the freezer for a few minutes until it gets slightly firm, then use a vegetable peeler to curl of ribbons of roe as a garnish for pasta, risotto, or egg dishes.

Use and Care

  • Upon arrival, be sure the ice packs are still semi-frozen and caviar jar is cold to touch
  • To store, refrigerate in the coldest part of your refrigerator with ice packs placed on top until service
  • Serve caviar jar nestled in ice or a caviar served to keep cold
  • Unopened caviar will remain fresh for up to 5 weeks
  • After opening, consume caviar within 4 days
  • Unlike conventional caviar, pressed caviar has an extended shelf life and can be frozen for up to 4 months
