“When I started doing this it was just me messing around,” Nocito says. But what began as a kitchen hobby has evolved into a business with a sense of mission. “The more you look at the beverage world,” he says, “the more you realize how crazy it is that almost nothing is made with natural ingredients.” Because his syrups are such pure transmitters of flavor, the best way to enjoy them is the simplest: Pour an ounce and a half of syrup over ice in a pint glass, top with chilled seltzer, stir gently, and serve.
