Cooking Prime Rib
To cook a roast to medium rare, use a cast-iron pan to sear the meat on all sides. Browning the meat in a hot pan will add tremendous flavor to the meat. Once browned on all sides, place the roast in a roasting pan, cover and cook at 300° F until the internal temperature of the meat is about 130° F—about 1 ½ to 2 hours. Remove the roast from the oven and let it rest for 30 minutes.
