Please Don't Overcook
There are two secrets to a delicious steak dinner. The first secret: a darn good piece of meat. The second secret: perfectly cooking that piece of meat. To achieve restaurant-quality medium rare, get a cast iron pan smoking hot. When we say smoking hot, we mean it. Add a touch of canola oil to the pan and gently place your well-seasoned (salt and pepper is all you need) steak in the pan. Let the steak sear on high heat until a golden crust develops and the steak easily releases from the pan. Flip the steak, turn the heat down ever so slightly, and sear the other side. Cook the steak to an internal temperature of 130° F—the cooking time will vary depending on the size of your steak. Let the steak rest for 8-10 minutes in a warm place.
