Slider Secrets

According to hamburger expert and author Josh Ozersky, the original hamburger was slider-sized, including little more than an ounce of beef and wedged in a tiny roll. To prepare a classic slider, beef patties should be cooked over a moist bed of chopped onions on a cast-iron griddle. The rising vapor from the onions helps to cook the patty—so there is no need to flip. This process is sometimes called steam-frying. Toss the bun on top to gently warm it before serving.
