Harissa, from the Arabic for “break into pieces,” is usually a made by pounding chiles in a mortar with garlic, caraway and coriander seeds and mixing it with oil to make a hot sauce. Le Sanctuaire’s version is a nuanced, dry spice mix of medium heat. Spearmint has been added for a barely discernible lightening note. Whisk it into extra virgin olive oil and rub the marinade on lamb chops before grilling. Or, use the oil in lieu of butter to dress corn-on-the-cob. Mix the spice with Greek yogurt and lemon juice for the centerpiece of a crudité presentation. Or, use it to spike mayonnaise and for a smoky, spicy club sandwich.
