Praiseworthy Pepper

Grown year-round on the island of Madura, it benefits from the dryness and balanced pH of the soil and perfect weather. As soon as it matures, the long pepper is harvested and immediately sun-dried to capture its unique flavor. Use a microplane to grate it into dishes that call for a punchy pepper like lamb
or a cacio e pepe. Or, infuse white vinegar with
leaves of tarragon and cracked long peppers to
brighten and spice dressings and marinades.
This pepper is even great when dropped into
a simmering curry; just be sure to fish it out before serving.
