Salt of the Earth

This beautiful sea salt has a hundred uses in the home kitchen: Sprinkle it on ripe tomatoes ten minutes before eating them. Drop it onto brownies or cookies just as they come out of the oven for a salty-sweet treat. Make caramels and drop a few flakes onto each. It is truly a fleur de sel, flower of the sea, in that it also features a lightly floral undertone. Try toasting a thick slab of country-style bread, piling fresh ricotta and crushed pistachios on top, and drizzling it with honey and sprinkling this sea salt over the whole.
