This pure white sea salt is hand-harvested from ancestral salt beds in the Philippines. Slightly chunkier than your standard kitchen sea salt, but not as large as flakes of Maldon, this is a wonderful finishing salt, bright and crisp. Sprinkle it on pastas, over salads, and even on to chocolate chip cookies as they come out of the oven.

Small producers hire workers who allow salt water to evaporate in shallow tidal waters, carefully rake the crystals, then gather them by hand into baskets called tiklas to drain. We love it for a pasta dish that needs salt but no more Parmesan, or to bring out the fresh, clean flavors in a green salad.
