Old World Traditions
Chef Massimo Battura’s Michelin-starred restaurant Osteria Francescana is best known for its modern interpretations of Modenese cooking: syringes of bollito misto, lasagna croccante, pasta e fagioli that, compressed, foamed and served in a glass, looks like a root beer float. But this innovator’s affection for the products of his region runs deep, and in 1995 he began crafting balsamic vinegars according to ancient methods on a 16th-century estate in the Modenese countryside. The boutique acetaia currently produces limited runs of five styles, including this versatile Artiginale, a blend of several ages.
