Why We Love It
Badia a Coltibuono means “Abbey of Good Harvest,” named by the Vallombrosan monks that first planted grapes on the lands where the Stucchi family now produces (in addition to classic regional wines) their single, singular olive oil. Their “good harvest” of organically grown, manually gathered olives is boutique in size and high in quality. By law, an olive oil must have an acidity level of less than .8% to be designated extra-virgin; at .22%, Coltibuono’s has one of the lowest on the market. Italians call these suave, full-figured flavorers olio crudo, or raw oil, and use them as a condiment after cooking, just as you would salt and pepper.
