For years, Henry Albert couldn’t buy a consistently great steak in his native New Orleans. So in 2010, he solved the problem himself, trading a career in office supplies for one in ribeyes by founding Rare Cuts, a high-end meat market specializing in impeccably bred beef, lamb and poultry.
Once your order is processed, your meat will be shipped to you (fresh, not frozen) for overnight delivery packed in an insulated box with frozen gel packs. Rare Cuts ships Monday through Friday. You will receive an email from Gilt Taste notifying you of your ship date.

Reservations book four to five months in advance for the one-table-a-night dinners Rare Cuts founder Henry Albert hosts in the back of his New Orleans shop. A favorite hors d'oeuvre of chef Gason Nelson—he’s also a private chef for Reggie Bush and Dwayne “the Rock” Johnson—is bruschetta draped with thin, fat-laced slices of grilled spinalis topped with smoked Gouda and aged balsamic. Can’t get to NOLA? No problem. You can recreate Nelson’s recipe at home in 20 minutes. Just sear each side of the spinalis over high heat for five minutes and then cook the whole piece over low heat for another five. Finally, let it rest a final five minutes before slicing.

Use and Care
- Your beef will arrive fresh, in vacuum-sealed bags and is cut 24 hours prior to shipping.
- Keep the meat sealed in the bags until you're ready to cook it.
- Use or freeze within 7 days.
- Frozen, this meat will be good for up to 6 months.
