These muffins use fresh blueberries and a garbanzo-fava bean flour from Bob’s Red Mill in Oregon, and are adored by those with and without food allergies. Erin McKenna, the brain behind Babycakes, was in charge of the coupons on her mom’s Saturday morning shopping trips, filling three carts to feed 12 kids for a week. Now Erin runs a booming business on the Lower East Side of Manhattan, using garbanzo flour instead of wheat flour, preferring agave nectar and pears to processed sugar, and creating dairy-free bases for her lush baked goods.
