This banana bread uses a flour blend from Bob’s Red Mill in Oregon, and you’ll be amazed that it’s dairy-free—it’s just that luscious. Babycakes mastermind Erin McKenna was in charge of the coupons on her mom’s Saturday morning shopping trips, filling three carts to feed 12 kids for a week. Now Erin runs a booming business on the Lower East Side of Manhattan, using garbanzo flour instead of wheat flour, preferring agave nectar and pears to processed sugar, and creating dairy-free bases for her baked goods. She has been featured on Oprah.com and in the Daily News, on seriouseats.com and in New York Magazine. In short, she’s a hit—and not just with those who suffer from food allergies.
