Sushi History

The term sushi—meaning “sour tasting”—is actually a reflection of traditional sushi’s roots. It was far from the fresh delicacy we imagine now: a combination of fresh fish wrapped in vinegary rice. Initially the term indicated salted fish buried in rice. The fermentation of the rice helped to break down the fish proteins into flavorful amino acids that we know now as umami.
