Harvested from the flowering stalks of sugar palm trees, producers collect the sap, boil it down into a dark caramel-like consistency, and pour it in molds to harden. This yields palm sugar of traditional Indonesian character – dark and butterscotchy with hints of smoke and molasses. The cylindrical blocks feel dense, but dissolve easily in every preparation from sweetening vinegary sauce or scattered on your morning oatmeal.

Palm Sugar vs. Coconut Sugar

Coconut sugar comes from a palm tree, but palm sugar does not come from a coconut tree. It’s more than just semantics. Coconut sugar results from extracting the sap from coconut flowers found on coconut palms. Palm sugar, on the other hand, comes from the sap of the date palm tree. It can be boiled down and sold as a paste or – in this case – in a rock-like chunk of sugar that’s dark, rich, and caramelized.
