Fish sauce is a staple in Thai cuisine and Tiparos is the gold standard. Since 1910 they’ve been making authentic fish sauce from anchovies and salt originally aged in earthenware jars. The fermentation process yields a pungent, reddish brown elixir used as an ingredient to heighten flavors. Alternately we recommend that you mix a few tablespoons with a chopped Thai chili pepper and use as an all-purpose dipping sauce.
